What you'll need to get:

  • Charlotte variety new potatoes (approx 800g)
  • 20-30g LURPAK® Slightly Salted butter
  • Roughly 6 sprigs of fresh mint
  • 3 cloves of garlic
  • Salt and pepper

Serves 4 as a side dish


What you need to do:

Scrub the potatoes and boil them, unpeeled, in a pan of lightly salted water with 5 sprigs of mint for 15-20 minutes, or until tender. While the potatoes are boiling, crush the garlic cloves and mash into the LURPAK®, adding a little salt and pepper.

Once the potatoes are done, drain and crush them lightly with a fork. Don't crush the potatoes too much – break the skin and flatten them just enough so the flesh can soak up the LURPAK®. Dot the LURPAK® mixture over the potatoes and add the remaining mint, stirring until the mint is wilted. Season well with salt and pepper and enjoy.
