Blueberry And Gin Muffins
What you'll need to get:
Makes 10-12 Muffins
- 275g of plain flour
- 1 tbsp baking powder
- 115g Castor sugar
- 1 egg
- 250ml of natural yoghurt
- 115g of melted LURPAK® Spreadable Unsalted
- 150g of blueberries
- 4 tbsp Gin
What you need to do:
Roughly crush the blueberries in a bowl with the back of a spoon. Add 4 tbsp of gin, and soak for 20 minutes. Meanwhile, sift the flour and baking powder together in a bowl. Stir in the sugar and make a well in the centre of the mixture. In a saucepan, melt the LURPAK® Spreadable over a low heat. In a separate bowl mix the egg, yoghurt and melted LURPAK® Spreadable, then pour into the well in the flour mixture. Mix quickly. Now carefully fold in the blueberries and gin with a metal spoon.
Arrange paper muffin cases in a muffin tray – and spoon in the mixture. Bake at 180ºC for approx 25 minutes. Use a knife to check the muffins are cooked – if the knife comes out with no mixture on they are ready.
