Buffalo Mozzarella And Tomato Salsa Toastie
What you'll need to get:
Serves 1
- 4 plum tomatoes
- Half an onion
- 15ml/ 1 tsp parsley or coriander
- 1 tsp balsamic vinegar
- 1 tbsp olive oil
- 25g Buffalo Mozzarella per Toastie
- LURPAK® Spreadable Slightly Salted or LURPAK® Lighter
- A portion of your favourite bread. Make sure it isn’t too chunky or it won’t fit in the toaster.
What you need to do:
Roughly blitz tomatoes and onion with a hand blender. Add parsley or coriander, and the balsamic vinegar. Add a touch of salt and pepper, and blitz again. This will make enough for about 4 Toasties.
To make up your toastie, place mozzarella on top of the buttered bread, and sprinkle a little salsa on top. Press firmly together and either pop in a Toastie maker, or under your grill. Toast until golden brown.
