Green Olive Basil And Pinenut Pesto
What you'll need to get:
- 25g green or black olives (make sure you buy them de-stoned)
- 2 bunches of fresh basil
- 2 tbsp of pinenuts
- 4 cloves of garlic
- 85g grated parmesan
- 5 tbsp olive oil
What you need to do:
Pan fry the pinenuts in a little oil until golden brown. Transfer to a bowl, and add the olives, basil, and garlic. Blitz with a hand blender until well chopped. Gradually add the olive oil and parmesan, and blend again, seasoning if needed. The consistency you are looking for depends on what you are making; try it roughly chopped and stuffed in chicken breasts. Or blend smooth and mix into freshly cooked pasta for a quick and tasty dinner.
