French Toast With Raspberries
What you'll need to get:
Serves 1
- 2 slices of quality white bread of your choice.
- 2 medium sized Free Range eggs.
- 1 dessert spoonful of LURPAK Slightly Salted Spreadable or LURPAK Lighter Spreadable.
- A little pepper to taste.
- Half a punnet (50g approx.) of fresh raspberries.
- Sugar to taste.
What you need to do:
Method
Crack the eggs and whisk the whites and yolks together with a fork on a plate. Add a little freshly ground back pepper to taste, and salt if required. Coat the slice of bread evenly on both sides with the egg mixture. Gently melt the LURPAK over a moderate heat in a large frying pan. Gently fry the 'eggy' bread, turning every two minutes until the egg is set. Place on a warmed serving plate with the fresh raspberries. Sprinkle a little sugar over the raspberries if they need it.

This is a great dish for children and adults alike. And if your children are less fond of vegetables this is a good recipe for providing lots of vitamins via different fruit. Try blueberries, strawberries, pears or even tinned peaches and pineapple.
